SPICY PASTA

Welcome back food family!


Last week I had one of those crazy šŸ˜œ days. I hadn't gone grocery shopping so decided to make dinner out of whatever I found in my kitchen.



In the fridge I found the spicy peanut salsa šŸ”„ that I made the other day and a couple pieces of bacon šŸ„“ and scallions. In the pantry I saw a half box of rigatoni pasta šŸ... and bam! This spicy pasta was born! Try it! It's delicious!!! šŸ˜‹


Servings: 8


Ingredients:

1 (16 oz) box Rigatoni Pasta

1/2 cup Spicy Peanut Salsa (click here for recipe)

1/4 cup Pasta Water

2 Scallions chopped

1 (16 oz) pk Bacon crumbled

1/2 cup Queso Fresco

2 to 3 tbs Olive Oil


Instructions:

1-Prepare the PEANUT SALSA. You can find the recipe by clicking here. Set aside.


2-Cook the PASTA per box instructions. While the pasta cooks, toast the BACON per package instructions. Set aside to cool then crumble and set aside. Now that the pasta is cooked, remove it from the water. Save 1/4 cup of the pasta water.


3-In a pan over medium heat add 2 to 3 tablespoons of OIL. Once hot add about 1/4 to 1/2 cup of the PEANUT SALSA then the PASTA WATER. Keep stirring.


4-Toss in the PASTA. Mix everything together making sure the pasta is coated in the salsa. Add more salsa or oil at this point if you'd like.


5-Sprinkle the SCALLIONS, BACON and QUESO FRESCO over the pasta. Stir to mix. Enjoy!
