SMOKED CORN ON THE COB

Welcome back food family!


The weather is finally getting nice ☀️ for us folks that live out in the midwest, USA! What that means for my house is that my husband will be grilling out more...yayy!!!



One of our favorite side dishes that he prepares is smoked corn 🌽 on the cob. It's a very simple recipe.


First, he cleans the corn, rubs it with butter 🧈, covers it in more butter, of course, 😂 and finally sprinkles it with Tajin... that's it, easy peasy!


To cook it he places the corn in the smoker for about 20 to 30 minutes or until the corn 🌽 is soft and fully cooked thru. Enjoy it with your favorite protein.


Once cooked, we like to sprinkle it with queso cotija or queso fresco and cilantro.

Ingredients:

6 CORN ON THE COB

1 to 2 (8 oz) sticks UNSALTED BUTTER

COTIJA or FRESCO CHEESE to taste

TAJIN seasoning to taste

CILANTRO to taste


Instructions:

1-Cover a baking dish in aluminum foil. Set aside.


2-Remove the corn from the husks. Manually break each piece in half.


3-Rub the corn with a stick of BUTTER. Return each corn piece to the baking dish.


4-Cut up the remaining butter into squares and toss over the corn.


5-Sprinkle the corn with TAJIN to taste.


6-Cook at 275 degrees Fahrenheit or 135 degrees Celsius in the smoker for 20 to 30 minutes or until soft and fully cooked through.


7-Once cooked and removed from the smoker, sprinkle with COTIJA or FRESCO CHEESE and CILANTRO to taste.
