QUICK HUEVOS RANCHEROS

Welcome back food family!


It’s breakfast 🍳time! How about we make some quick huevos rancheros?! 🥚#LetsGoaCocinar



Servings: 4


Ingredients:

8 EGGS

2 ROMA TOMATOES chopped

1/2 ONION chopped

2 to 3 SERRANO PEPPERS chopped

1 (28 oz) can CRUSHED TOMATOES

1 (7 oz) can SPICY TOMATO SAUCE, Pato Brand

2 to 3 tbs OIL (Avocado, Canola or Vegetable)

SALT and PEPPER to taste

CILANTRO and ONION for garnish


Instructions:

1-In a pan over medium heat, sauté the TOMATOES, ONION and SERRANOS in about 2 to 3 tablespoons of oil. Approximately 2 to 3 minutes.


2-Add the CRUSHED TOMATOES and SPICY TOMATO SAUCE. Let it simmer on low heat.


3-Add the eggs to the pan, one at a time. SALT and PEPPER to taste.


4-Lower the heat to low. Cover the pan to let the eggs cook to taste.


5-Uncover the pan and garnish with CILANTRO and ONION. Enjoy!
