Today we were craving a good hearty dish of pork chicharrón (cracklings) 🐷 in green salsa. If you’ve never tried it, I highly recommend it! This very traditional Mexican dish is delicious 🤤 If you love carnitas then you will enjoy this dish as well. 👌🏼
Just when I was about to get started, I realized I had run out of tomatillos! Good thing I had purchased a bottle of Herdez Salsa Verde the other day 😃
I simply sliced a half onion and two serrano peppers then rough chopped a handful of cilantro. I sautéed the veggies with the salsa and...Wow! The freshness of the veggies and frying of the salsa totally elevated this dish! The salsa is perfectly seasoned so I didn’t need to add any additional salt or anything. It is pretty tasty straight out of the bottle. 😋
This dish was quick, easy and more importantly… delicious! 👍🏼
Servings: 4 to 6
Ingredients:
1 bottle HERDEZ SALSA VERDE
1/2 lbs PORK CHICHARRÓN
1/2 ONION sliced
2 SERRANO PEPPERS sliced
1 cup CILANTRO
2 tbs OIL (Canola, Vegetable or Avocado)
Instructions:
1-Slice the ONION, SERRANO PEPPERS and rough chop the CILANTRO. Set aside.
2-In a pan over medium heat add a tablespoon of OIL. Once hot add the ONION and SERRANO PEPPERS. Sauté for about a minute. Move the veggies to the side of the pan.
3-In the same pan add another tablespoon of OIL. Once hot toss in the HERDEZ SALSA VERDE to fry. Add the CILANTRO. Mix the salsa with the veggies.
4-Add the CHICHARRÓN to the pan and mix. Make sure they get covered in the salsa.
5-Put the lid on the pan. Lower the heat to low. Let it simmer for approximately 5 minutes or until the chicharrón is tender but still a little crunchy.
