PICKLED CUERITO TOSTADAS

Welcome back food family!


Today I made this "antojito" for my family which brought me back to a beautiful part of my childhood in Mexico.

As many of you know, I was born in Guadalajara. As a young child in GDL I remember an older gentleman, Don Chabelo, who sold the most delicious shrimp cocktails and tostadas de cueritos "pickled pork skin" out of a carrito "cart". As soon as he pulled up to the neighborhood and folks heard the little cart bell they'd start to form a line to wait for him to park the carrito. This was one of my dad's favorite treats.

 
 

If you already like pork rinds, then this salad is for you! Rather than fried like pork rinds, the pork skin for this salad has been pickled in vinegar and seasoned with spices similar to pickled jalapeños. You can find them at most Mexican grocery stores as well as stores that sell Latino food brands.


Ingredients:

1 (15oz) jar Pickled Pork Skin diced into 1 inch pieces

2 to 3 cups Cabbage sliced

3 Tomatoes diced

1 medium Onion diced

1 to 2 cups Cilantro diced

8 to 10 Limes juiced

1/2 cup Pickled Jalapeño liquid

1/4 cup Pickled Pork Skin liquid

Salt and Pepper to taste


Tomatoe Sauce Ingredients:

3 Tomatoes

1 to 2 tsp Mexican Oregano

Salt to taste


Other Ingredients:

Tostadas

Cotija Cheese

Valentina Salsa

Refried beans (optional)

Avocado slices (optional)


Instructions:

1-Prepare the tomato sauce. Add 6 cups of water to a small pot. Add the tomatoes. Boil over medium heat until the tomatoes are soft. Approximately 5 to 8 minutes. Set aside to cool.


2-Once cooled blend the tomatoes into a smooth sauce consistency, pour into your serving dish.


3-Place the oregano between the palms of your hands. Press your palms in a circular motion to crush the oregano. Pour the oregano in the sauce. Salt to taste. Mix with a spoon. Set aside.


4-In a salad bowl add the cabbage, tomatoes, onion, cilantro and pickled pork skin.


5-Salt and pepper to taste. Pour the lime juice and mix.


6-Now add the liquid of the pickled jalapeño and pork skin container over the salad. Give it a final mix.


7-To assemble the tostadas, first place your desired amount of cuerito salad, pour some tomato sauce, sprinkle with cheese then top it with Valentina salsa. You can also spread refried beans on the tostada before adding the salad then top with avocado slices if you like. Enjoy!
