Here's another delicious dessert that I think your family will enjoy! š
I used coconut š“ š„„ sugar and agave nectar which are both low glycemic ingredients. They are delicious substitutes if you are keeping track of your sugar intake.
I also used a cake mix š° to help cut down on prep time, but you can use your favorite yellow cake recipe.
Servings: 12
Ingredients for Pecan Topping:
1/2 cup butter melted
1/2 cup coconut sugar (or brown sugar)
1/4 cup agave nectar
1/4 tsp salt
1 cup chopped pecans
Ingredients for Cake Batter:
1 box vanilla cake mix or your favorite yellow cake recipe
All ingredients listed on the cake mix package
Optional Items to prep bunt pan
Bakers Joy spray or butter and flour
Instructions:
1-Preheat your oven per cake mix instructions.
2-Using a whisk or a hand-held mixer combine the melted butter, coconut sugar, agave nectar and salt in a bowl. Mix until the coconut sugar is fully integrated.
3-Add pecans to the mixture and fold in with a spatula until fully integrated.
4-To keep the cake from sticking, spray the bunt pan with Bakers Joy or spread butter and flour on it.
5-Pour the resulting pecan mixture into your bundt pan in one layer. Press by hand or use a spatula.
6-Combine your cake mix, eggs, vegetable oil and water in a large bowl using a whisk or a hand-held mixer. Mix until there are no lumps.
7-Pour the batter over the pecan layer. Spread it out evenly and make sure it covers the entire layer of pecans.
8-Bake the cake per cake mix instructions or until ready. You'll know it's ready when you insert a toothpick, and it comes out clean. Mine was ready in 30 minutes.
9-When the cake is out of the oven place it on a cooling rack for 10 minutes. Don't leave the cake in the pan for too long. That can cause it to become damp and stick to the pan. 10 minutes is enough.
10-When the cake has cooled, place a large plate over the top of the bundt pan. Tap the pan lightly and shake it to loosen up the cake a bit. Holding both the plate and pan, flip it over. Serve the cake while itās still warm with vanilla ice cream. You can serve it once itās cooled as well.
