Summer is right around the corner and that means one thing —carne asada 🥩 on the grill, cold drinks 🍺 on the patio and time with family and friends. Today I'd like to share with you this delicious salad, 🥗 so you are ready for cookout season.
This pasta is the perfect side dish for hamburgers 🍔 , hot dogs 🌭 and tacos. 🌮 It is dressed with Herdez Guacamole Salsa and therefore packed with authentic Mexican flavors. So, get ready to entertain and create lasting memories. I think your family will love it!

Servings: 10 to 12
Ingredients:
1 (15.7 oz) bottle HERDEZ GUACAMOLE SALSA use amount preferred
2 (7 oz) bags of small SHELL PASTA
1/2 cup RED ONION chopped
1 cup GRAPE TOMATOES quartered
1 cup CILANTRO roughly chopped
6 oz QUESO FRESCO
2 (15 oz) cans WHOLE KERNEL CORN
1/2 cup AVOCADO OIL
SALT and PEPPER to taste
Instructions:
1-Chop the ONION, TOMATOES and CILANTRO. Crumble the QUESO FRESCO by hand. Set all aside.
2-In a skillet over medium heat char the CORN. Use a spoon or tongs to keep tossing the corn so it doesn't stick to the skillet. Set aside to let it cool off.
3-Add water and about 1/2 tbs of salt with 1 tbs of oil to a pot. Cook the PASTA per package instructions.
4-Once the pasta is cooked use a strainer to carefully remove the pasta from the water. Set aside to let it cool off. At this point you can mix about 1/2 tbs of avocado oil with the pasta. This will prevent it from sticking while it cools.
5-In a salad bowl add the cooled PASTA, ONION, TOMATOES, CILANTRO, QUESO FRESCO, CORN, AVOCADO OIL, HERDEZ GUACAMOLE SALSA, SALT and PEPPER to taste. Toss to mix all the ingredients. Keep refrigerated until ready to serve.
