Welcome back family!
In Mexico we love spaghetti in a creamy red or green sauce. Here I have taken that delicious dish and added the meatballs that compliments it perfectly. As they say, spaghetti and meatballs is a marriage made in heaven. Enjoy!
Ingredients for Meatballs:
3 lbs GROUND TURKEY or BEEF
1 pk (12 oz) BACON
2 tbs BACON GREASE
1 cup ONION chopped
1 cup BREADCRUMBS
1/2 cup CILANTRO chopped
1/4 cup PARSLEY chopped
1 tbs GARLIC POWDER
1 tsp MEXICAN OREGANO
1 tsp MARJORAM
2 to 3 tbs BADIA COMPLETE SEASONING to taste
1 EGG
Ingredients for Sauce:
3 TOMATOES
1/4 ONION
1/2 bar (4 oz) CREAM CHEESE
3 GARLIC CLOVES
1 cup SPAGHETTI WATER
1 tbs KNORR CHICKEN BOUILLON to taste
4 CHIPOTLE PEPPERS
1/2 cup SOUR CREAM
Additional Ingredients:
1 tbs OIL (Vegetable, Canola or Avocado)
COTIJA CHEESE (for garnish)
QUESO FRESCO (for garnish)
CILANTRTO chopped (for garnish)
1-Cut and cook the BACON in a pan over medium heat until crispy. Separate the bacon from the fat. Set them both aside for later.
2-Turn your oven to 350 degress Fahrenheit or 180 degress Celsius.
3-Mix all the MEATBALL ingredients in a mixing bowl. Shape the meatballs to approximately two inches in diameter. Once all the meatballs are done, sear them in the bacon fat for approximately 2 minutes on each side. Place them in a baking dish. Keep the meat grease in the pan.
4-Place the baking dish with the meatballs in the oven and cook for approximately 20 minutes or until the meatballs are fully cooked through. IMPORTANT: The cooking time is for a convection oven. If you are not using a convection oven you will need to adjust the cooking time per your ovens settings.
5-While the meatballs are cooking in the oven, cook the SPAGHETTI PASTA following the package instructions.
6-When the pasta is almost done, blend the SAUCE ingredients. Set aside.
7-In a pan over medium heat fry the sauce in 1 tablespoon of the meat grease. Keep stirring for approximately 3 minutes. Add the cooked pasta to the sauce. Mix to incorporate. Once the meatballs are cooked add them to the pan. Garnish with COTIJA CHEESE, QUESO FRESCO and CILANTRO.
