Servings: 4
Ingredients:
4 large Chicken Thighs, bone in
3 large Russet Potatoes, sliced
1 cup White Mushrooms, sliced
6-8 Garlic Cloves, minced
3/4 cup Dry Red or White Wine
2 cups Chicken Broth
2 tsp Dry Oregano
1 tsp Dry Thyme
4 tbs Unsalted Butter
4-6 tbs Olive Oil
Salt and Pepper to taste
Optional: You can make your own chicken broth by boiling 4 cups of water with 3 tbs of chicken bouillon.
Tip: I like to use Mexican oregano due to its bold and delicious flavor but you can use regular oregano.
Instructions:
1-If you choose to make your own CHICKEN BROTH, prepare it as indicated in the optional section above. Set aside.
2-Salt and Pepper the CHICKEN. Set aside.
3-In a pan over medium heat add 2 to 3 tbs of OIL. Once hot add the chicken. Cook on both sides til it gets golden brown. Approximately 10 minutes on each side. Remove the chicken from the pan and place it in a separate dish. You will finish cooking the chicken in the oven later. For now just set aside.
4-In the same pan, add another 2 to 3 tbs of OIL, if necessary. Now add the POTATOES. Salt and pepper as needed. Toss them for about 3 minutes then add the MUSHROOMS. Keep tossing for an additional 3 minutes.
5-Preheat the oven to 450 degrees Fahrenheit.
6-Move the potatoes and mushrooms to the sides of the pan then add the BUTTER and GARLIC CLOVES to the center of the pan. Mix the ingredients for about a minute and the butter has fully melted.
7-Add the WINE, CHICKEN BROTH, OREGANO and THYME to the pan. Mix with a spoon to bring all the ingredients together. Approximately one minute.
8-Return the chicken to the pan skin side up. Place it towards the top of the pan surrounded with the potatoes, mushrooms and broth.
9-Turn the stove off and cover the pan with foil. Place the chicken in the oven to cook for about 25 minutes or until fully cooked. The chicken might need an additional 10 to 15 minutes more cooking time if you are not using a convection oven.
10-Turn the oven off and carefully take the chicken out. Remove the foil. Return the chicken back to the oven uncovered. Turn the oven broiler on. Broil the chicken for 3 to 5 minutes. This will get the skin nicely browned and crispy.
