Welcome back food family!
So, what did you have for Taco Tuesday? Because in my house, we got a little fancy and made Shrimp Tacos aka Tacos Gobernador… and they were so good we accidentally invented Taco Wednesday by enjoying them two days in a row 😂.
These beauties are everything I love in life: shrimp, melty cheese, buttery tortillas, and a little drama in the backstory. One bite and you’ll understand why my family was suddenly volunteering to “help” in the kitchen… which really meant hovering like hungry seagulls 🐦⬛🤣.
These tacos are juicy, cheesy, a little spicy, and absolutely irresistible. The kind of taco that makes you close your eyes and say “ay Dios mío…” before you even swallow 🤤.

📜 A Taco Fit for a Governor — Food Origins
Picture it: Mazatlán, 1987. The governor of Sinaloa, Francisco Labastida, was planning a visit and made a reservation at the famous restaurant Los Arcos. The owner, wanting to impress him (and maybe earn some bragging rights), remembered that the governor loved his wife’s shrimp tacos.
But you know how it goes… men get competitive too 😂. So the owner and his chef said, “Let’s outdo the señora.” They sautéed shrimp with garlic, onion, poblano peppers, tomatoes, chipotle salsa, cilantro, and enough butter to make Julia Child proud. Then they fried tortillas in—yes—more butter, added cheese, folded everything together, and created a masterpiece.
When the governor asked what this heavenly creation was called, the owner didn’t even blink: “Tacos Gobernador.” And just like that, a legend was born. 👍🏼
🍤 Why I Had to Make These ASAP — My Inspiration to Make It
Let me tell you… the moment I heard this story, I knew these tacos had attitude. A little fancy, a little dramatic, and a whole lot of flavor—basically, the taco version of me 😌.
Plus, shrimp cooks fast, which is perfect because my family starts asking “¿ya casi?” before I even finish chopping the onions. These tacos are fun to make, smell incredible, and bring everyone running to the kitchen like I’m giving away free concert tickets 🎟️.
The combo of buttery veggies, chipotle heat, juicy shrimp, and melty Chihuahua cheese? Ay no… it’s dangerous. You’ll be tempted to eat the filling straight from the pan. Not that I’m admitting anything… 👀😂

Servings: 16 to 20
Ingredients:
2 lbs SHRIMP cleaned & cut
2 Doz CORN TORTILLAS
3 tbs UNSALTED BUTTER for frying the veggies & shrimp
3 GARLIC CLOVES chopped
1/2 cup WHITE or YELLOW ONION chopped
1/2 cup RED ONION chopped
3 POBLANO PEPPERS sliced
3 TOMATOES chopped
1 (7oz) can CHIPOTLE SAUCE
1/2 cup CILANTRO chopped
KOSHER SALT to taste
BLACK PEPPER to taste
32 oz CHIHUAHUA CHEESE shredded
More UNSALTED BUTTER for frying the tacos
Instructions:
Over medium heat add the BUTTER to the pan. Once melted add the GARLIC CLOVES and ONION. Sauté for about 2 minutes.
Add the POBLANO PEPPERS to the pan and sauté for about 5 to 8 minutes or until soft.
Add the TOMATOES, CHIPOTLE SAUCE, KOSHER SALT and BLACK PEPPER to taste. I added 1/2 tbs of salt but the amount is entirely your choice.
Mix with a spoon then add the SHRIMP. Keep mixing until the shrimp are fully cooked through, about 8 to 10 minutes. Set aside.
Warm the tortillas and wrap them with a kitchen towel or tortilla warmer. They just need to be warm not hot. This will make them easier to fold when frying. Set aside.
In another pan over medium low heat add 1 tbs of UNSALTED BUTTER. Once melted place a tortilla in the pan. Sprinkle CHEESE over the tortilla.
Once the cheese starts to look soft but before fully melted, add some shrimp filling then fold over one side of the tortilla to make the taco. Fry both sides of the taco. Approximately 2 to 3 minutes on each side.
Remove the taco from the pan and repeat steps 6 and 7 until you have finished preparing all the tacos. Depending on the size of your pan, you can do several tacos at the same time.
