Welcome back food family!
Have you ever had your family look in the fridge then say, “there’s nothing to eat”… wrong! There’s always something! It just takes a little creativity sometimes. 😊 Well today I had one of those moments in my house, so I got a little creative.
I wanted to make something quick like quesadillas and tasty like enchiladas but without all the extra prep work. 👍🏼
Using a few ingredients which I usually have in my fridge and pantry I came up with this non traditional dish. I call them ENCHILADILLAS! A combination of an enchilada and a quesadilla.
My family loved them! They were delish! 🤤

Servings: 12 pcs
Ingredients for the Sauce:
1 GARLIC CLOVE
1/4 ONION
3 GUAJILLO PEPPERS seeds removed and cut in fourths
1 ANCHO PEPPER seeds removed and cut in fourths
3 ROMA TOMATOES quartered
SALT to taste
Other Ingredients:
6 tbs OIL (Avocado, Canola or Vegetable)
1 Doz TORTILLAS
MELTING CHEESE
Ingredients for garnish:
SOUR CREAM
ONION chopped
CILANTRO chopped
Instructions:
1-In a pan over medium low heat sauté the garlic, onion, peppers and tomatoes in 1 to 2 tablespoons of oil. Approximately 5 minutes or until soft. Keep continuously stirring to make sure the peppers don’t burn or they will get bitter.
2-Remove from the pan and blend into a sauce. Salt to taste.
3-In the same pan over medium low heat add 1 to 2 tablespoons of oil. Once hot fry the sauce. Keep stirring for approximately 2 to 3 minutes. Set aside.
4-Warm the tortillas. Set aside.
5-Place 2 tablespoons of oil in a pan over medium low heat. Once hot, place a tortilla then brush it with sauce using a kitchen brush.
6-Flip the tortilla over. Add melting cheese. Fold one side of the tortilla over. Brush more sauce if you’d like. Once warm on both sides remove from the pan. Garnish with sour cream, cilantro and onion.
