I love easy and fast prep meals, don't you? Well, this is one of those dishes! š
In as little as 15 minutes tops you'll have this delicious corn š½ side dish ready to pair with any protein of your choice!

Servings: 4 to 6
Ingredients:
1 (29 oz) can Whole Kernel Corn
1 (8 oz) can Tomatoe Sauce
1 large Onion sliced
2 Roma Tomatoes sliced
1 to 2 JalapeƱos sliced
1/2 cup Cilantro chopped
Salt and Pepper to taste
1 to 2 tbs Oil
Optional:
1 cup Cotija Cheese more to sprinkle once served
Instructions:
1-In a pan over medium heat add the OIL. Once hot add the ONIONS. SautƩ until they get soft and translucent. Approximately one minute.
2-Add the TOMATOES to the pan. SautĆ© for approximately a minute. Now add the JALAPEĆOS and CILANTRO. SautĆ© an additional minute.
3-Add the CORN to the pan. SALT and PEPPER to taste. Mix the veggies.
4-Add the can of TOMATOE SAUCE. Mix everything together.
5-If you are not making this vegan, sprinkle the COTIJA CHEESE over the veggies. Give it a final stir to bring all the flavors together. Serve hot as a side with a protein of your choice.
