MEXICAN STYLE CHEESECAKE

Welcome back family!


Who wants cheesecake? I do of course... duh!! Who doesn't love a good cheesecake, right? Here is a recipe that I make for my family. You might want to make two since they don't last very long!



Ingredients:

2 pks MARIA COOKIES

1 1/2 sticks UNSALTED BUTTER

1 can (11.5 oz) EVAPORATED MILK

1 can (14 oz) CONDENSED MILK

1 bar (8 oz) CREAM CHEESE

4 EGGS

2 tsp VANILLA


Additional Ingredients:

Butter and Flour to prep your baking dish


Instructions:

1-Preheat the oven to 350 degrees Fahrenheit (180 Celsius).


2-Butter and Flour the baking dish. Set aside.


3-Crush the MARIA COOKIES in a food processer or place them inside a plastic freezer bag and crush them with a rolling pin. Set aside in a bowl.


4-Melt the BUTTER in the microwave following your microwave's instructions.


5-Pour the melted butter over the crushed cookies and mix by hand to create the crust.


6-Press the crust onto the bottom and sides of the baking dish. Set aside.


7-Blend the EVAPORATED MILK, CONDENSED MILK, CREAM CHEESE, EGGS AND VANILLA and pour on top of the crust.


8-Bake uncovered for 45 to 55 minutes. Oven settings differ so make sure to check the cheesecake after 40 minutes. If a toothpick comes out clean it is done. IMPORTANT: The cooking time is for a convection oven. If you are not using a convection oven you will need to adjust the cooking time per your ovens settings.


9-Let it cool and enjoy!
