Coleslaw Ingredients:
3 cups Red Cabbage sliced
2 to 3 Tomatoes chopped
1 medium Onion chopped
8 to 10 Radishes chopped
4 to 8 Serrano Peppers chopped
1 cup Cilantro chopped
Lime Juice (4 to 6 squeezed)
Salt & Pepper per taste
Chipotle Salsa Ingredients:
2 tbs Sour Cream
2 tbs Mayonnaise
2 Chipotle Peppers
1/2 tsp Salt
Beer Batter Ingredients:
2 cups All Purpose Flour
1 tbs Baking Powder
2 tsp Salt
1 tbs Paprika
1 tbs Garlic Powder
1/4 tsp Cumin
16 oz Dark Beer
Additional Ingredients:
2 to 3 lbs Tilapia Fish Filets cut to 2x6 inch slices
1 cup Corn Starch
1 cup All Purpose Flour
Frying Oil
Tortillas
Instructions:
Chop all the veggies for the coleslaw. Place in a mixing bowl. Sprinkle with lime juice and season with salt and pepper to taste. Mix and set aside.
Blend all the chipotle salsa ingredients. Place in a bowl and set aside.
Mix all the beer batter dry ingredients in a mixing bowl. Now slowly whisk in the beer. Mix until you get a thick batter similar to the consistency of a pancake batter. Set aside.
In a mixing bowl add 1 cup of flour
and 1 cup cornstarch. Mix and set aside.
In a pan over medium high heat add 2 to 3 cups of oil. Once hot coat the fish slices in the cornstarch dry mix then bathe in the the beer batter and place in the pan with hot oil. Fry for about 3 to 4 minutes on each side. Place on a paper lined baking sheet. Repeat these steps until all the fish slices are fried. You can do a few at a time. To serve, warm up the tortillas, place the fish over the tortilla, cover with coleslaw then drizzle with salsa. Enjoy!
