EASY BEEF GUISADO

Welcome back food family!


Are you a meat 🍖 and potatoes 🥔 kind of person? Then this is the dish for you!


This delicious and satisfying dish can be enjoyed with a side of rice or beans. It’s a great family dinner.



I like to purchase whole peeled prickly pear cactus 🌵 at the grocery store that I slice and cook at home in a steamer. I add 1/4 piece of onion 🧅 and a handful of cilantro. This has become my favorite cooking method since the prickly pear cactus sap is automatically drained while it cooks. You can also cook them in a pot of water💦 if you prefer. But if you’re short on time, store bought canned or bottled prickly pear cactus work just as well. Just make sure to wash and drain them before use.

Servings: 4 to 6


Ingredients:

2 lbs BEEF CHUCK

1 1/2 lbs CACTUS fresh cooked, canned or bottled

4 POTATOES peeled and chopped

1 ONION sliced

2 to 3 SERRANO PEPPERS sliced

3 TOMATOE sliced

1 (7 oz) EL PATO TOMATO SAUCE

2 tbs OIL (Canola, Vegetable or Avocado)

1/4 cup WATER

KOSHER SALT and PEPPER to taste

KNORR BEEF or CHICKEN BOUILLON to taste


Instructions:

1-If using fresh peeled CACTUS then slice, cook in a pot of water until soft then drain. You can also cook them in a steamer. If using store bought canned or bottled cactus, wash and drain. Set aside.


2-Chop the POTATOES, ONION, SERRANO PEPPERS and TOMATOES. Set aside.


3-Chop the BEEF into small cubes. Set aside.


4-In a pan over medium heat add a tablespoon of OIL. Once hot toss in the BEEF. Season with KOSHER SALT and PEPPER to taste. Sauté for about 5 minutes. Cover the pan, lower the heat to low and let the beef cook for approximately 15 minutes. Uncover the pan and keep stirring until the beef is toasted, approximately 5 minutes. It will get more cooking time later in the recipe. Remove from the pan and set aside.


5-In the same pan over medium heat add another tablespoon of OIL. Once hot add the ONION and POTATOES. Sauté for about a minute. Add the WATER. Lower the heat to low and cover the pan. Cook for approximately 5 minutes.


6-Return the BEEF to the pan and add the CACTUS, SERRANO PEPPERS, TOMATOES and EL PATO TOMATOE SAUCE. Season with KNORR BOUILLON to taste. Stir all ingredients to mix. Put the lid on the pan. Cook until the potatoes and beef are soft and fully cooked.
